Cultivation

The Royal Oyster is a special, deep-cupped oyster. It is harvested in naturally iodized oyster beds located in protected areas. This process lasts 2-3 years during which the ostreiculteurs gently nurture them, pre-select the best, and make sure everything is done to allow them to reach adult size in optimum conditions.

The maturing

The Royal Oyster «vintage» crop is then matured in the heart of Artouan Marsh just south of Marennes. There, our master ostreiculteurs place them in special beds for a few months with only 3 oysters per square metre.

During this maturing stage, the Royal Oyster is able to feed better and attains a grade of thirteen or higher. It is an oyster which is selected, above all, because of its flesh and its incomparable taste.

Preservation

Royal Oysters are selected, measured, cleaned and sorted by category and size. They are then put into special hampers « la table », by hand, just as they always have been for generations. In each hamper the oysters are presented in silver paper with a booklet presenting the product and its characteristics.
All our hampers are carefully labeled to ensure the perfect traceability of the product (the name of the person in charge of the packaging is also mentioned and can be found with the oysters ).
